How would sexuality be based on gender when you cannot know someone’s gender unless they express it

Unless you believe you can tell someone’s gender by looking at them

Or that certain genders WILL and MUST look a certain way

If genders are internal and known best by the individual, how can someone only be attracted to some genders and not others? Does one’s attraction change when people open up about their actual gender identity?
